I keep these little darlin's in my freezer, so whenever I'm in the mood for "a little something" I know I can pop one of these in my mouth! It is guaranteed to satisfy my craving for a little something sweet that hints of chocolate chip cookie dough...but is made with healthy ingredients that will boost your energy without gluten, dairy or sugar.....and is low calorie so you can have a few without feeling guilty!! Sunnyside Su's Sensational Cookie Dough Energy Balls

[Dairy Free, Gluten Free, Paleo & Vegan!]


[Makes 30- approximately]



Ingredients

  • 1 cup cashews natural cashews [150g] [These will need to be roasted.]

  • 1 tbsp melted coconut oil

  • 1.5 tbsp maple syrup

  • 1/2 tsp pure vanilla extract

  • pinch of coarse salt

  • 2 tbsp of cacao nibs or dairy/gluten free chocolate chips


Directions

  1. Preheat oven to 350F. Roast cashews on a cookie sheet for approximately 8 minutes.

  2. Once the cashews are cool enough to handle, add them to the food processor and blend on high until you have a very fine "cashew flour." Continue blending until it is so fine that it is starting to stick together like the early stage of cashew butter.

  3. Drizzle in the melted coconut oil, maple syrup and vanilla and sprinkle in a pinch of coarse salt. Blend on high until you have a smooth mixture. When you pinch it between your fingers it should stick together.

  4. Transfer the mixture to a bowl and add in the cacao nibs or chocolate chips.

  5. Use a teaspoon measure to roll into balls that are fairly small to make 30.

  6. Refrigerate or freeze immediately. I tend to store mine in the freezer.
